Ingredients
16 oz firm fish fillets, such as tuna or Mahi-Mahi, cut into bite sized chunks (skin fish if needed) - salt and pepper the fish, cover and set aside
1 can diced tomatoes on juice, or 3 large romas, seeded and diced
1 red onion, sliced thinly
3 - 4 garlic cloves, sliced thinly
1/2 green bell peppers, seeded and diced
3 - 4 red potatoes cut into 11/2 inch pieces
1 1/2 tbsp olive oil
1 bay leaf
Saffron
1/2 tbsp paprika
2 tbsps capers, rinsed
1/2 cup white wine
fresh chopped parsley for garnish
Method
1. Heat a large saucepan to medium heat
2. Add olive oil
3. Sauté the onion and garlic until soft
4. Add everything else except fish to the pan
5. Add water if needed to cover the vegetables
6. Bring to a boil then simmer, covered for 25 minutes
7. Add fish and cook for 4 more minutes
8. Sprinkle with parsley and serve immediately with some crusty bread!
